Buffalo on menu for hangi in the snow
Hāngi master Rewi Spraggon is heading for Canada for a Dine Vancouver chef exchange.
He's laid hangi in the snow before in Russia and Taupo and says he's up for the challenges, such as getting the rocks hot enough and watching for moisture in the soil.
He'll be cooking alongside a First Nations chef who was a contestant on Master Chef America.
"It's going to be interesting to cook with him. He's looking at doing a bit of sea lion and buffalo so we're going to look at how we do that in the pit. I'm cooking a bit of salmon, possibly a bit of coconut rice, so we are doing a gourmet dinner together so that is going to be interesting, sharing the skills and looking at how we host manuhiri at this dinner," Mr Spraggon says.
