Polytech takes chef school to marae


Hawkes Bay’s Eastern Institute of Technology is offering a marae cookery programme as a national qualification.
It’s running the Level 3 National Certificate in Hospitality (Basic Cookery) at the Te Aranga Marae in Flaxmere and the Pukemokimoki Marae in Maraenui.
Tutor Grant Sipeli says the 18-week programme will cover cooking basics and how to apply that knowledge to cooking for large numbers.
He says both marae also have gardens where horticulture students work, so the students will be able to source fresh produce.
Kaumatua, kuia and kaitakatu or traditional cooks will also be involved to guide students on the protocol for serving food on a marae.
The qualification will allow graduates to go on to EIT’s professional chef practice programmes.
